Join me in my home kitchen in a virtual yeast donut making workshop via zoom on 9-21-2021.
Together in real time we will make donuts and talk about the donut business and enjoy some donut trivia. This will make for not only great donuts, but a well-rounded balance of fun and learning. Class size will be limited to 20 people.
Follow along virtually step by step picking up donut making tips and tricks along the way. There’s plenty of time to chat and ask me questions. Class duration about 100 minutes however I am not watching the clock and feel free to stay on and chat for as long as you like with like-minded people.
Q and A: Virtual Donut Making
Q. What variety of donuts will we be making?
We will be making traditional raised glazed donuts and professionally prepared cinnamon twists (yes, there is a difference) whereby you see the cinnamon swirl around the cinnamon twist.
Q. What makes this workshop special?
The donut training will be 2 fold: One part in real time in my home kitchen while simultaneously using excerpts from the Advanced Donut Training Course. For instance, when I loaf the yeast donut dough in the home kitchen (In real time) I will simultaneously show you an excerpt from the Advanced Donut Training Course on loafing 30 pounds of yeast donut dough.
Another example would be: When I show you how-to proof the donuts for home kitchen use (In real time) I will then simultaneously demonstrate advanced donut proofing techniques with an excerpt from the advanced donut training course. You will learn what the 3 stages of peak fermentation are, and why they are needed, and how-to test the donuts for peak fermentation prior to frying.

• 15-minute Yeast donut technical overview – flours, oils, butters, sugars, fermentation & mechanical, chemical leavening processes for yeast & cake donuts

• Proofing the donuts (Video and real time demonstration)
• Preparing classic glaze

In addition, I will explain the differences between the yeast donut recipe we are using for the virtual donut training vs my master donut recipes I use when opening new donut businesses. You will also learn about how I make commercialized donut glazes and why, how and when to use them (You will have the Ah, ha moment!).
